Red Curry BBQ Chicken

Do you know that curry paste can be used in so many different ways in Thai food, from marinating, fried-rice and more. Today I’m introducing to you Red Curry BBQ Chicken.
Red Curry Paste:
1) 7 Large dry red chili soaked ( you can deseed the chili to decrease the spiciness)
2) 3 Tbsp Garlic pealed ( About 2 Thai Garlic head)
3) 5 small shallots peeled
4)1 Tbsp Root of coriander
5) 1/2 Tbsp Galangal roughly chopped
6) 1/2 Tbsp Lemongrass mashed and roughly chopped
7) 1/3 Tbsp Coriander seed toasted
8) 1 Tsp Cumin seed toasted and grounded
9) 1/2 Tsp Kaffir Lime zest
10) 1 Tsp Siam Cardamom
11) 1 Mace flower
12) 1 Tsp white pepper corn
13) 1 1/2 Tsp good quality shrimp paste toasted on a banana leaf
14) Pinch of salt
Chicken marinate:
1) 4 pieces of Chicken thighs deboned (or with bone if you like)
2) 1 Cup of coconut cream
3) 3 TBSP of Red Curry paste
4) 1 Tsp Salt
5) 2 Tbsp fish sauce
6) 1 Tbsp Soy sauce
7) 1 Tbsp Natural Coconut sugar (paste one)
Instruction:
Make the marinate by mixing everything together apart from chicken.
When everything is mixed well together then you can now add chicken. Leave to meat the marinate for 30 mins before grill the chicken on BBQ or in the oven ( With grill mode)
