How to steam Sticky Rice – 3 ways

To make sticky/ glutinous rice at home is possible and there are different ways you can do it. In this post, I will be introduce to you 3 different methods as below.

  1. Thai traditional method
  2. Making stick rice with microwave (yes, it’s possible and the result comes out as good as the other method.
  3. Using instant steamer/ double pot steamer

About Glutinous rice

Glutinous rice is a popular kind of grain in South East Asia. We eat the rice, both sweet and savoury. Its character is different from the usual rice because of its gooey texture.

There are different kinds of sticky rice. Fore example, black, short and rounded grain, and long and thin grain. Each kind has its own flavour that goes well with certain dishes.

For Mango sticky rice, it’s best to use a long, thin and white, middle age to achieve the best result. In Thai we called this kind ” Khao Neow Kew Ngoo (snake fangs) “. For Mango sticky rice recipe Click here.

Anyway, it’s not mandatory to use this specific kind. You can use any type, and it still taste yummy.

Is Glutinous Rice Gluten-free?

Yes, it is gluten-free, despite its other name glutinous rice; The name only describe the texture of the grain.

1. Thai traditional method

How to make Sticky Rice – Thai Traditional method

Equipment

  • Bamboo steamer
  • vase shape pot

Ingredients
  

  • 500 g Sticky Rice
  • Water

Instructions
 

  • Put sticky rice in a bowl and rinse it with fresh water several times until all of the starches are washed off. You can inspect this by looking at the water in the bowl that you use to clean the rice. If the water is clear then it's good.
  • Soak the rice for at least 7 hours or leave it over night. If you don't have time, you can also soak the rice in warm water for 1 hour before cooking.
  • soak bamboo steamer in the water for 5 mins. This will help the sticky rice not to stick to the bamboo fibre.
  • In the vase shape pot, put inside 2-3 cups of water or measure water 4 inches from the bottom of the pot. Turn on the stove and wait for the water to boil.
  • You can add 3-4 of Pandan leaves in the boiling water to give an extra fragrance if you like.
  • Once the water is boiled. Strain the sticky rice and put it inside the bamboo steamer before placing the steamer over the pot. Put a lid over the sticky rice and cook for 7 minutes. Turn over the rice by shaking and flipping technique. Try to avoid using spoon because the spoon will break the grain of the rice. Cook for another 7 minutes and taste the rice if it's cooked to your preference. If you like it to be softer, just leave the rice cooking for another minute and keep checking the rice.
  • Once the rice is cooked. Remove the steamer from the stove and place the rice in a bowl. Cover the bowl with cling wrap or lid to avoid the rice become dry and hard.
  • If you want to fridge the left over, you can reheat by re-steam the rice for a few minutes.

2. Making stick rice with microwave

Cook Time 15 mins

Ingredients
  

  • 1 CUP Sticky rice
  • 1 CUP Water

Instructions
 

  • Put sticky rice in a bowl and rinse it with fresh water several times until all of the starches are washed off. You can inspect this by looking at the water in the bowl that you use to clean the rice. If the water is clear then it's good.
  • Soak the rice for 1-2 hours. You can reduce the time of soaking to 20-30 minutes, the rice will still edible but it won't look as nice as the soaked rice.
  • Drain the rice and place in a microwavable ware and put one cup of water inside. Close the container with a lid and leave the air hole open. If you don't have a lid, you can use cling wrap and punch a few holes.
  • Put the contain in the microwave at 1000 watts for 3 minutes. After 3 minutes is done, stir the rice lightly with a spatula. Put it back to the microwave for another 3 minutes. Turn down the heat to medium and microwave the rice for another 1.5 – 2 minute. Taste the rice and see if you like the consistency. If it's still too hard you can put it back in the microwave for another 30 seconds.
  • After the rice is cooked. Keep it inside the container with a closed lid to keep it moist and soft when serving.

3. Using instant steamer/ double pot steamer

Ingredients
  

  • 500 g Sticky Rice

Instructions
 

  • Put sticky rice in a bowl and rinse it with fresh water several times until all of the starches are washed off. You can inspect this by looking at the water in the bowl that you use to clean the rice. If the water is clear then it's good. 
  • Soak the rice for at least 7 hours or leave it over night.
  • Damp filter cloth. This will help the rice not sticking to the cloth.
  • In the double steamer pot, put inside 2-3 cups of water or measure water 4 inches from the bottom of the pot. Turn on the stove and wait for the water to boil.
  • You can add 3-4 of Pandan leaves in the boiling water to give an extra fragrance if you like.  
  • Once the water is boiled. Strain the sticky rice and put it inside filter cloth before placing the it on the top layer of the pot. Put a lid over and cook for 7 minutes. Turn over the rice by shaking and flipping technique; grab both sides of the cloth and roll the rice inside. Try to avoid using a spoon because the spoon will break the grain of the rice. Cook for another 7 minutes and taste the rice if it's cooked to your preference. If you like it to be softer, just leave the rice cooking for another minute and keep checking the rice.
  • Once the rice is cooked.  Remove the steamer from the stove and place the rice in a bowl. Cover the bowl with cling wrap or lid to avoid the rice become dry and hard.
  • If you want to fridge the left over, you can reheat by re-steam the rice for a few minutes.
